摘 要
随着全球食品安全问题日益突出,新技术在提升食品安全管理水平中的应用成为研究热点。本研究旨在探索区块链、物联网和大数据分析等新兴技术在食品安全管理中的创新应用,以解决传统监管模式中存在的追溯难、效率低等问题。通过文献分析、案例研究和实证调查相结合的方法,本文系统梳理了新技术在食品生产、流通和消费环节的应用现状与潜力。研究发现,区块链技术能够实现食品供应链的全程可追溯,有效提升信息透明度;物联网技术通过实时监测温湿度等关键参数,显著降低了食品变质风险;大数据分析则为企业风险评估和政府监管决策提供了科学依据。以中国某大型乳制品企业为例,其通过构建基于区块链的追溯系统,将产品召回时间缩短了60%,同时降低了30%的运营成本。研究结果表明,新技术的应用不仅提高了食品安全管理的效率和精准度,还促进了产业链各主体间的协同合作。

THE APPLICATION AND EXPLORATION OF NEW TECHNOLOGY IN IMPROVING THE LEVEL OF FOOD SAFETY MANAGEMENT
ABSTRACT
With the global food safety problem becoming increasingly prominent, the application of new technology in improving the level of food safety management has become a research hotspot. This study aims to explore the innovative application of emerging technologies such as blockchain, Internet of Things and big data analytics in food safety management, so as to solve the problems of difficult traceability and low efficiency in the traditional regulatory model. Through the combination of literature analysis, case study and empirical investigation, this paper systematically sorts out the application status and potential of new technologies in food production, circulation and consumption. Research found that blockchain technology can realize the full traceability of food supply chain and effectively improve information transparency; Internet of Things technology significantly reduces the risk of food deterioration by real-time monitoring of key parameters such as temperature and humidity; and big data analysis provides scientific basis for enterprise risk assessment and government regulatory decision. Take a large dairy company in China, for example, which has built a blockchain-based traceability system to shorten the product recall time by 60% and reduce its operating costs by 30%. The results show that the application of new technologies not only improves the efficiency and accuracy of food safety management, but also promotes the cooperation among the subjects of the industrial chain.
