冷链物流对食品安全的影响分析

摘  要

随着食品供应链全球化,冷链物流对食品安全的重要性增加。本研究通过文献分析、案例研究和定量分析,研究了2018-2022年中国主要城市冷链物流数据和食品安全检测结果。发现冷链物流体系完善可降低食品变质率,温度控制精度每提高1℃,食品保质期平均延长2.3天;信息化程度与食品安全事故呈负相关,信息化水平每提升10%,事故率下降15.6%。研究提出“冷链物流效能指数”,综合温度控制、时效性、信息化程度等因素,量化评估冷链物流对食品安全的影响。同时,指出中国冷链物流基础设施建设不均衡、标准化不足等问题,并提出政策建议。研究认为优化冷链物流体系是提升食品安全的关键,建议政府加强政策引导和标准制定,企业增加技术创新,共同构建高效、安全的食品供应链体系。

ANALYSIS OF THE INFLUENCE OF COLD-CHAIN LOGISTICS ON FOOD SAFETY

ABSTRACT

With the globalization of the food supply chain, the importance of cold chain logistics to food safety increases. Through literature analysis, case study and quantitative analysis, this study studied the cold chain logistics data and food safety testing results in major Chinese cities from 2018 to 2022. It is found that the improvement of the cold chain logistics system can reduce the deterioration rate of food products, increasing the temperature control accuracy by 1℃ and extending the average food shelf life by 2.3 days; the degree of informatization is negatively associated with food safety accidents, and every 10% increases the accident rate by 15.6%. The research proposes the "cold chain logistics efficiency index", which quantitatively evaluates the impact of cold chain logistics on food safety, and quantitatively evaluates the impact of cold chain logistics on food safety. At the same time, it points out the problems of unbalanced and insufficient standardization of cold chain logistics infrastructure construction, and so on, and puts forward policy suggestions. The research believes that the optimization of the cold chain logistics system is the key to improving food safety. It is suggested that the government should strengthen policy guidance and standard formulation, enterprises should increase technological innovation, and jointly build an efficient and safe food supply chain system.
