食品保鲜技术在果蔬保鲜中的应用效果研究

摘  要

随着全球食品供应链的延长和消费者对高品质果蔬需求的增加,食品保鲜技术在果蔬保鲜中的应用日益受到关注。本研究旨在探讨不同保鲜技术对果蔬品质保持及延缓腐败的效果,重点分析气调保鲜、低温冷藏、涂膜保鲜以及复合保鲜技术的应用特性。通过实验室模拟与实地试验相结合的方法,选取典型果蔬样本进行多组对照实验,并采用感官评价、理化指标检测及微生物分析等手段综合评估保鲜效果。结果表明,复合保鲜技术相较于单一技术具有更显著的优势,可有效降低呼吸强度、减少水分损失并抑制微生物繁殖,从而显著延长果蔬货架期。本研究创新性地提出了一种基于环境友好型材料的复合涂膜方案,其在实际应用中表现出优异的保鲜性能,为推动绿色保鲜技术的发展提供了新思路。研究表明,优化保鲜技术参数与组合方式是提升果蔬保鲜效果的关键,也为相关技术的产业化推广奠定了理论基础。

Abstract

With the extension of global food supply chains and the increasing demand for high-quality fruits and vegetables, food preservation technologies have gained significant attention in the context of fruit and vegetable preservation. This study aims to investigate the effects of different preservation technologies on maintaining quality and delaying spoilage in fruits and vegetables, with a focus on the application characteristics of modified atmosphere preservation, low-temperature storage, coating preservation, and composite preservation technologies. By integrating laboratory simulations with field experiments, typical fruit and vegetable samples were selected for multi-group controlled experiments, and the preservation effects were comprehensively evaluated using sensory assessments, physicochemical indicator tests, and microbial analyses. The results indicate that composite preservation technology demonstrates more pronounced advantages compared to single technologies, effectively reducing respiration intensity, minimizing water loss, and inhibiting microbial proliferation, thereby significantly extending the shelf life of fruits and vegetables. Innovatively, this study proposes a composite coating scheme based on environmentally friendly materials, which exhibits superior preservation performance in practical applications and provides new insights for promoting the development of green preservation technologies. The research highlights that optimizing preservation technology parameters and combinations is crucial for enhancing preservation effectiveness and lays a theoretical foundation for the industrial promotion of related technologies.
