摘 要
随着现代人对健康需求的日益增长,功能性食品添加剂在食品营养强化中的应用受到广泛关注。本研究旨在探讨不同类型功能性食品添加剂对食品营养价值提升的作用机制及其实际应用效果,通过文献分析与实验验证相结合的方法,选取多种常见功能性添加剂进行系统研究。研究发现,特定功能性添加剂能够显著改善食品的营养成分结构,增强其生物利用度,并在一定程度上满足特殊人群的营养需求。例如,某些益生元和膳食纤维可有效促进肠道健康,而矿物质螯合剂则有助于提高微量元素吸收率。本研究创新性地提出了基于目标人群定制化的营养强化策略,并建立了相应的评价体系,为功能性食品开发提供了科学依据。研究结果表明,合理选择和搭配功能性食品添加剂,不仅能够优化食品品质,还能实现精准营养的目标,为食品工业的健康发展提供了重要参考。

Abstract
With the growing demand for health among modern individuals, the application of functional food additives in food nutrition fortification has received extensive attention. This study aims to explore the mechanisms by which different types of functional food additives enhance the nutritional value of food and their practical application effects, employing a combined approach of literature analysis and experimental validation. A systematic investigation was conducted on various common functional additives. The findings indicate that specific functional additives can significantly improve the nutritional composition structure of food, enhance its bioavailability, and partially meet the nutritional needs of special populations. For instance, certain prebiotics and dietary fibers effectively promote intestinal health, while mineral chelating agents contribute to increased absorption rates of trace elements. Innovatively, this study proposes a customized nutrition fortification strategy based on target populations and establishes a corresponding evaluation system, providing a scientific basis for the development of functional foods. The results demonstrate that the rational selection and combination of functional food additives not only optimize food quality but also achieve the goal of precision nutrition, offering crucial references for the healthy development of the food industry.
