摘  要

随着全球食品供应链的日益复杂化和消费者对食品安全要求的不断提高,食品安全问题已成为全球关注的热点。本研究围绕食品安全追溯体系的建立及优化策略展开,首先阐述了食品安全理论和追溯体系理论,为后续研究奠定了理论基础。详细分析食品安全追溯体系建立的目标与原则,设计了追溯体系的整体架构,并探讨了关键技术的选择与实现路径。在此基础上,本研究深入剖析了当前食品安全追溯体系在技术应用、法律法规、参与者协作及消费者认知等方面面临的问题。针对这些问题,本研究提出了包括技术优化、法律法规完善、激励机制构建及消费者教育在内的多项优化策略。通过引入先进信息技术、加强数据标准化与互操作性、完善法律法规体系、制定统一追溯标准、建立企业参与激励机制、强化跨部门协作机制以及加强消费者食品安全教育等措施。

FOOD SAFETY TRACEABILITY SYSTEM ESTABLISHMENT AND OPTIMIZATION STRATEGY

ABSTRACT

With the increasing complexity of the global food supply chain and the increasing improvement of consumers' requirements for food safety, food safety issues have become the focus of global attention. This study focuses on the establishment and optimization strategy of food safety traceability system, and firstly expounds the theory of food safety theory and traceability system theory, which lays a theoretical foundation for the subsequent research. The ob jectives and principles of the food safety traceability system are analyzed in detail, the overall architecture of the traceability system is designed, and the selection and implementation path of key technologies are discussed. On this basis, this study deeply analyzes the problems faced by the current food safety traceability system in terms of technology application, laws and regulations, participant collaboration and consumer cognition. In view of these problems, this study proposes a number of optimization strategies, including technology optimization, laws and regulations improvement, incentive mechanism construction and consumer education. Through the introduction of advanced information technology, strengthen data standardization and interoperability, improve the legal and regulatory system, formulate unified traceability standards, the establishment of enterprise participation incentive mechanism, strengthen the cross-department cooperation mechanism and strengthen consumer food safety education and other measures.
