本文全面探讨了冷链物流中的食品安全保障机制,首先阐述了冷链物流作为现代食品供应链中不可或缺的一环,其定义、构成以及对于保障食品新鲜度、延长保质期的重要作用。在此基础上,文章详细分析了当前冷链物流中食品安全保障机制的构建现状,包括法律法规与标准体系的建立、严格的温度控制措施、全面的卫生保障措施以及信息追溯系统的应用等,这些措施共同构成了冷链物流食品安全保障的基石。然而,面对日益复杂的食品供应链和不断提升的食品安全要求,现有机制仍存在一些不足。因此,本文进一步提出了优化冷链物流中食品安全保障机制的策略,包括采用先进的实时温度监测设备和建立温度异常预警系统以强化温度监控与管理;通过建立智能仓储管理系统、引入人工智能辅助决策以及推广自动化与无人化设备来提升冷链物流的信息化与智能化水平;同时,强调完善法律法规与标准体系,包括制定和修订相关法规、建立国家标准与行业标准,并定期评估与更新,以确保法律法规的时效性和适用性;最后,加强人员培训与教育,提高从业人员的专业素养和食品安全意识,是保障冷链物流食品安全不可或缺的一环。

RESEARCH ON FOOD SAFETY GUARANTEE MECHANISM IN COLD CHAIN LOGISTICS
ABSTRACT
This paper comprehensively discusses the food safety guarantee mechanism of cold chain logistics. Firstly, it expounds the definition, composition and important role of cold chain logistics in guaranteeing food freshness and extending shelf life as an indispensable part of modern food supply chain. On this basis, the paper analyzes in detail the current situation of the construction of food safety guarantee mechanism in cold chain logistics, including the establishment of laws, regulations and standards system, strict temperature control measures, comprehensive health security measures and the application of information traceability system, etc., which together constitute the cornerstone of food safety guarantee in cold chain logistics. However, in the face of increasingly complex food supply chains and rising food safety requirements, there are still some shortcomings in the existing mechanism. Therefore, this paper further puts forward the strategy to optimize the food safety guarantee mechanism in cold chain logistics, including the use of advanced real-time temperature monitoring equipment and the establishment of temperature anomaly early warning system to strengthen temperature monitoring and management; Through the establishment of intelligent warehouse management system, the introduction of artificial intelligence to assist decision-making and the promotion of automation and unmanned equipment to improve the information and intelligent level of cold chain logistics; At the same time, it emphasizes the improvement of laws, regulations and standards system, including the formulation and revision of relevant regulations, the establishment of national standards and industry standards, and regular evaluation and update to ensure the timeliness and applicability of laws and regulations; Finally, strengthening personnel training and education, improving the professional quality and food safety awareness of practitioners, is an indispensable part of ensuring cold chain logistics food safety..
