苹果沙棘复合饮料的研制与品质分析







摘  要


本研究聚焦于苹果沙棘复合饮料的研制与品质全面分析,旨在开发一种集营养、美味与健康于一体的新型饮品。首先,通过详尽的原料选择与预处理流程,我们确保了苹果与沙棘的新鲜度与品质,同时考虑了产地与季节对原料特性的影响。在榨汁与混合调配环节,我们优化了榨汁设备的使用,并精心调配了稳定剂与抗氧化剂的添加量,以维持饮料的天然风味与营养价值。随后,采用先进的热力杀菌工艺与灌装技术,有效延长了产品的保质期,同时严格控制了灌装环境的无菌条件,确保了产品的安全性。在品质分析方面,本研究从感官品质、营养成分、微生物安全性及稳定性与保质期等多个维度进行了深入探讨。结果显示,该苹果沙棘复合饮料不仅色泽鲜艳、口感醇厚,而且富含多种维生素与矿物质,具有较高的营养价值。同时,通过严格的微生物控制,确保了产品的卫生质量。此外,该饮料还表现出良好的稳定性与较长的保质期,满足了现代消费者对于健康、便捷饮品的需求。本研究不仅为苹果沙棘复合饮料的工业化生产提供了科学依据,也为丰富市场饮品种类、提升消费者健康水平做出了积极贡献。

DEVELOPMENT AND QUALITY ANALYSIS OF APPLE SEA-BUCKTHORN COMPOUND BEVERAGE


ABSTRACT


This study focuses on the development and quality analysis of apple sea-buckthorn complex drink, aiming at developing a new type of drink that integrates nutrition, delicious taste and health. Firstly, through detailed raw material selection and pretreatment process, we ensure the freshness and quality of apples and sea buckthorn, while taking into account the influence of origin and season on raw material characteristics. In the juicing and blending process, we optimize the use of juicing equipment and carefully adjust the amount of stabilizers and antioxidants to maintain the natural flavor and nutritional value of the beverage. Subsequently, the use of advanced thermal sterilization process and filling technology, effectively extend the shelf life of the product, while strictly control the aseptic conditions of the filling environment, to ensure the safety of the product. In terms of quality analysis, this study has conducted in-depth research from multiple dimensions such as sensory quality, nutritional composition, microbial safety, stability and shelf life. The results showed that the apple sea-buckthorn complex drink not only had bright color and mellow taste, but also was rich in various vitamins and minerals, and had high nutritional value. At the same time, the sanitary quality of the product is ensured through strict microbial control. In addition, the drink also shows good stability and a long shelf life, meeting the needs of modern consumers for healthy and convenient drinks. This study not only provides a scientific basis for the industrial production of apple sea-buckthorn complex beverage, but also makes a positive contribution to enriching the types of market drinks and improving the health level of consumers.
