摘  要

在当前全球食品安全形势日益严峻的背景下,食品中非法添加剂的问题日渐突显,对公共健康构成了严重威胁。本研究深入探讨了食品中非法添加剂的快速筛查技术,旨在通过高科技手段确保食品安全,保护消费者的健康权益。本文首先介绍了研究的背景、目的及意义,随后分析了国内外在非法添加剂快速筛查技术方面的研究现状与发展。文章重点讨论了非法添加剂对健康的潜在危害,包括其毒性效应、致畸与遗传毒性、内分泌干扰以及对神经和认知功能的损害。进一步地,本研究概述了新型快速筛查技术—特别是高通量筛查技术的原理与优势,如其快速高效、大规模数据处理能力、高灵敏度和准确性,以及多样性和灵活性。文章还详细介绍了光谱分析技术和生物传感技术在食品筛查中的应用实例,并探讨了相关法规与标准对快速筛查技术的要求。最后,本研究展望了快速筛查技术的未来发展趋势,包括人工智能与大数据的深度融合,纳米技术在提升检测灵敏度中的应用,便携式与远程监测设备的研发,以及环境友好型筛查技术的探索。研究强调,随着科技的进步,快速筛查技术的发展将对食品安全监管产生重大影响,并最终促进公共健康保护。

Abstract

Against the backdrop of the increasingly severe global food safety situation, the problem of illegal additives in food is becoming increasingly prominent, posing a serious threat to public health. This study delves into the rapid screening technology for illegal additives in food, aiming to ensure food safety and protect consumers' health rights through high-tech means. This article first introduces the background, purpose, and significance of the research, and then analyzes the current research status and development of rapid screening technology for illegal additives at home and abroad. The article focuses on the potential health hazards of illegal additives, including their toxic effects, teratogenicity and genetic toxicity, endocrine disruption, and damage to neurological and cognitive functions. Furthermore, this study outlines the principles and advantages of novel rapid screening techniques, particularly high-throughput screening techniques, such as their fast and efficient processing, large-scale data processing capabilities, high sensitivity and accuracy, as well as diversity and flexibility. The article also provides detailed examples of the application of spectral analysis technology and biosensing technology in food screening, and explores the requirements of relevant regulations and standards for rapid screening technology. Finally, this study looks forward to the future development trends of rapid screening technology, including the deep integration of artificial intelligence and big data, the application of nanotechnology in improving detection sensitivity, the research and development of portable and remote monitoring devices, and the exploration of environmentally friendly screening technology. The study emphasizes that with the advancement of technology, the development of rapid screening techniques will have a significant impact on food safety regulation and ultimately promote public health protection.
