餐饮业对绿色食材的可持续采购与管理研究

摘  要
本文主要研究了餐饮业对绿色食材的可持续采购与管理。绿色食材是指在种植、养殖和加工过程中尽量减少对环境和人类健康的负面影响的食材。餐饮业的可持续发展在当前社会和环境背景下具有重要意义。然而,餐饮业绿色食材采购面临着多种挑战和障碍,包括消费者需求、供应链管理和成本等方面的问题。为了解决这些问题,餐饮企业可以采取供应链管理策略,与绿色食材供应商合作,并关注农业生产和加工环节的管理。此外,绿色食材的认证与标准也是推动可持续采购的关键因素之一。信息技术的应用可以提供供应链追溯系统和智能采购决策支持系统,帮助餐饮业进行绿色食材的采购与管理。通过案例分析和经验分享,本文总结了一些成功的实践,并提出了政府政策与支持、跨行业合作等发展方向。尽管研究仍存在一些局限性,但本文的研究成果对餐饮业实现绿色食材的可持续采购与管理具有一定的指导意义。

Abstract
This paper mainly studies the sustainable procurement and management of green food materials in catering industry. Green ingredients are those that minimize negative impacts on the environment and human health during cultivation, breeding and processing. The sustainable development of the catering industry is of great significance in the current social and environmental context. However, the catering industry faces multiple challenges and obstacles in sourcing green ingredients, including consumer demand, supply chain management and cost issues. In order to solve these problems, catering enterprises can adopt supply chain management strategies, cooperate with green food suppliers, and focus on the management of agricultural production and processing links. In addition, certification and standards for green ingredients are also one of the key factors to promote sustainable sourcing. The application of information technology can provide supply chain traceability system and intelligent procurement decision support system to help the catering industry to purchase and manage green ingredients. Through case analysis and experience sharing, this paper summarizes some successful practices, and puts forward the development direction of government policy and support, cross-industry cooperation, etc. Although there are still some limitations in the research, the research results of this paper have certain guiding significance for the realization of sustainable procurement and management of green ingredients in the catering industry.
