本文全面探讨了功能性低聚糖在乳制品中的多样化应用及其对人体健康的深远影响。功能性低聚糖,作为一类具有特殊生理功能的碳水化合物,以其独特的理化性质、良好的稳定性和显著的生物活性,在乳制品工业中发挥着越来越重要的作用。本文首先系统概述了功能性低聚糖的定义、分类及其理化性质与稳定性,为后续研究奠定了理论基础。随后,本文深入分析了功能性低聚糖在乳制品中的多重应用,包括改善乳制品的营养价值,通过提供非消化性碳水化合物来丰富产品成分;调节肠道菌群平衡,促进有益菌的增殖,从而维护肠道健康;增强乳制品的功能性,如添加益生元特性以满足消费者对健康食品的需求;以及提升乳制品的感官品质,如改善口感和质地。在健康效应评价方面,本文详细阐述了功能性低聚糖在调节肠道菌群、提高免疫力、促进矿物质吸收、调节血脂和胆固醇代谢等方面的积极作用。通过探讨功能性低聚糖对肠道菌群的调节机制、对免疫系统的促进作用、对矿物质生物利用率的提升效果以及对血脂代谢的调控机制,本文揭示了功能性低聚糖在预防肠道疾病、增强机体抵抗力、改善营养状况及预防心血管疾病等方面的潜在健康益处。

Abstract
The application of functional oligosaccharides in dairy products and its far-reaching effects on human health were discussed in this paper. Functional oligosaccharides, as a class of carbohydrates with special physiological functions, play an increasingly important role in the dairy industry due to their unique physical and chemical properties, good stability and remarkable biological activity. In this paper, the definition, classification, physical and chemical properties and stability of functional oligosaccharides are systematically summarized, which lays a theoretical foundation for the subsequent research. Subsequently, the multiple applications of functional oligosaccharides in dairy products were analyzed, including improving the nutritional value of dairy products and enriching the product composition by providing non-digestible carbohydrates; Regulate the balance of intestinal flora, promote the proliferation of beneficial bacteria, and thus maintain intestinal health; Enhancing the functionality of dairy products, such as adding prebiotic properties to meet consumer demand for healthy foods; And enhance the sensory qualities of dairy products, such as improving taste and texture. In terms of health effect evaluation, the positive effects of functional oligosaccharides on regulating intestinal flora, improving immunity, promoting mineral absorption, regulating lipid and cholesterol me tabolism were described in detail. By exploring the regulatory mechanism of functional oligosaccharides on intestinal flora, promoting effect on immune system, enhancing effect on mineral bioavailability and regulating mechanism of lipid me tabolism, this paper reveals the potential health benefits of functional oligosaccharides in preventing intestinal diseases, enhancing body resistance, improving nutritional status and preventing cardiovascular diseases.
