本研究通过深入探讨农药残留对农产品质量安全的影响,全面分析了农药残留对农产品感官品质、营养价值、贮藏加工以及消费者健康等方面的潜在影响。我们系统梳理了农药学基础,包括农药分类、降解机制等,以及食品安全理论,特别是食品链安全和风险评估的重要性。同时,深入研究了国内外农药残留标准与法规,对比了不同国家和地区的最大残留限量及法规执行情况。在农药残留对农产品质量的影响方面,我们详细探讨了农药残留如何影响农产品的外观、口感、营养成分等感官品质和营养价值,以及农药残留对农产品贮藏期和加工过程的影响。此外,我们还特别关注了农药残留对消费者健康的潜在风险,包括长期暴露和急性中毒等可能性。针对农药残留在农产品质量安全中存在的问题,如残留超标、混合残留、检测不足以及消费者认知不足等,我们提出了一系列应对策略。这些策略包括建立健全农药使用和残留监测体系、鼓励使用生物农药替代化学农药、建立全面的农产品农药残留检测体系以及加强消费者信息透明等。本研究旨在通过系统分析农药残留对农产品质量安全的影响及其存在的问题,提出有效的应对策略,为保障农产品质量安全和消费者健康提供科学依据。

Abstract
This study comprehensively analyzed the potential effects of pesticide residues on sensory quality, nutritional value, storage and processing of agricultural products and consumer health through in-depth discussion of the impact of pesticide residues on quality and safety of agricultural products. We systematically reviewed the basis of pesticide science, including pesticide classification, degradation mechanism, etc., as well as food safety theory, especially the importance of food chain safety and risk assessment. At the same time, in-depth study of domestic and foreign pesticide residue standards and regulations, compared the maximum residue limits of different countries and regions and the implementation of regulations. In terms of the impact of pesticide residues on the quality of agricultural products, we discussed in detail how pesticide residues affect the appearance, taste, nutritional composition and other sensory quality and nutritional value of agricultural products, as well as the impact of pesticide residues on the storage period and processing of agricultural products. In addition, we have paid special attention to the potential health risks of pesticide residues to consumers, including the possibility of long-term exposure and acute poisoning. Aiming at the problems of pesticide residues in the quality and safety of agricultural products, such as excessive residues, mixed residues, insufficient detection and insufficient consumer awareness, we put forward a series of coping strategies. These strategies include establishing a sound pesticide use and residue monitoring system, encouraging the use of biopesticides instead of chemical pesticides, establishing a comprehensive pesticide residue testing system for agricultural products, and enhancing consumer information transparency. This study aims to systematically analyze the impact of pesticide residues on the quality and safety of agricultural products and the existing problems, and propose effective countermeasures to provide scientific basis for ensuring the quality and safety of agricultural products and consumers' health.

Abstract
