摘 要
食品包装材料的抗菌性能研究是当前食品安全领域的重要课题,随着微生物污染问题日益突出,开发具有抗菌功能的包装材料成为迫切需求。本研究旨在探索新型抗菌包装材料的设计与应用,通过结合纳米技术与天然抗菌剂,制备出兼具高效抗菌性能和环境友好特性的复合材料。研究采用溶胶-凝胶法和共混挤出法制备了载银纳米粒子及植物提取物的复合抗菌膜,并通过扫描电子显微镜、傅里叶变换红外光谱仪等手段对其结构与性能进行表征。实验结果表明,该复合材料对大肠杆菌和金黄色葡萄球菌表现出显著的抑制作用,且抗菌效果随银纳米粒子浓度增加而增强。此外,植物提取物的引入不仅提升了材料的生物相容性,还延长了其抗菌活性的持久性。在实际应用中,将该材料用于食品包装后,可有效延缓微生物引起的腐败变质,显著延长食品保质期。本研究的创新点在于成功实现了天然抗菌剂与纳米材料的协同作用,为抗菌包装材料的绿色化发展提供了新思路,同时为食品工业的安全性和可持续性做出了重要贡献。

Abstract: The study of the antibacterial properties of food packaging materials is a critical topic in the field of food safety. With the increasing prominence of microbial contamination, there is an urgent need to develop packaging materials with antibacterial functionality. This research aims to explore the design and application of novel antibacterial packaging materials by integrating nanotechnology with natural antibacterial agents, thereby fabricating composite materials that possess both high-efficiency antibacterial performance and environmental friendliness. Sol-gel method and co-extrusion blending were employed to prepare composite antibacterial films loaded with silver nanoparticles and plant extracts, and their structures and properties were characterized using scanning electron microscopy, Fourier transform infrared spectroscopy, and other techniques. The experimental results indicate that the composite material exhibits significant inhibitory effects on Escherichia coli and Staphylococcus aureus, with the antibacterial efficacy increasing as the concentration of silver nanoparticles rises. Furthermore, the incorporation of plant extracts not only enhances the biocompatibility of the material but also prolongs the persistence of its antibacterial activity. In practical applications, the use of this material in food packaging effectively delays microbial-induced spoilage and significantly extends the shelf life of food products. The innovation of this study lies in the successful realization of synergistic effects between natural antibacterial agents and nanomaterials, providing new insights into the green development of antibacterial packaging materials and making important contributions to the safety and sustainability of the food industry.
