苹果多酚的抗氧化性研究
摘 要
本研究旨在探讨苹果多酚的提取、分离、抗氧化性测定及其机理与应用。首先,通过溶剂提取和超声波提取等方法,从苹果中提取出富含多酚的提取物,并通过柱层析和膜分离等技术进行纯化。随后,采用多种抗氧化性测定方法,对苹果多酚的抗氧化性能进行了全面评价,并探讨了其影响因素。在机理研究方面,本研究通过自由基清除能力实验和抗氧化酶活性抑制实验,验证了苹果多酚的抗氧化作用机制。同时,深入探讨了酚羟基的作用机制以及抗氧化性与结构的关系,为开发新型抗氧化剂提供了理论依据。本研究还探讨了苹果多酚在食品、医药、化妆品等领域的应用前景,展望了其未来的发展方向。

Abstract
The purpose of this study was to investigate the extraction, separation, antioxidant determination of apple polyphenols and its mechanism and application. First, polyphenol-rich extracts were extracted from apples by solvent extraction and ultrasonic extraction and purified by techniques such as column chromatography and membrane separation. Subsequently, the antioxidant properties of the polyphenols in apple were comprehensively evaluated, and the influencing factors were investigated. In terms of mechanistic studies, this study verified the antioxidant mechanism of apple polyphenols through free radical scavenging ability experiments and inhibition of antioxidant enzyme activities. At the same time, the mechanism of action of phenol hydroxyl group and the relationship between antioxidant and structure are deeply explored, which provides a theoretical basis for the development of new antioxidants. This study also discusses the application prospect of apple polyphenols in food, medicine, cosmetics and other fields, and prospects its future development direction.

Abstract
The purpose of this study was to investigate the extraction, separation, antioxidant determination of apple polyphenols and its mechanism and application. First, polyphenol-rich extracts were extracted from apples by solvent extraction and ultrasonic extraction and purified by techniques such as column chromatography and membrane separation. Subsequently, the antioxidant properties of the polyphenols in apple were comprehensively evaluated, and the influencing factors were investigated. In terms of mechanistic studies, this study verified the antioxidant mechanism of apple polyphenols through free radical scavenging ability experiments and inhibition of antioxidant enzyme activities. At the same time, the mechanism of action of phenol hydroxyl group and the relationship between antioxidant and structure are deeply explored, which provides a theoretical basis for the development of new antioxidants.
