Abstract

In this paper, the application of ultrasonic assisted extraction technology in the extraction of natural pigment from plants was discussed. With the increasing demand of consumers for natural and healthy food, plant-derived natural pigments have attracted much attention because of their safety, non-toxic and environmental protection characteristics. However, the traditional extraction methods have some problems, such as low efficiency, large solvent consumption and environmental pollution. Ultrasonic assisted extraction technology can effectively solve these problems with its unique physical effects, such as cavitation effect, mechanical vibration and microjet. In this paper, the principle and mechanism of ultrasonic assisted extraction technology were summarized, and its significant advantages in improving the extraction efficiency, maintaining the quality of pigment, reducing the amount of solvent, shortening the extraction time and expanding the application range were analyzed. Then, through literature review and experimental data, the key factors affecting the ultrasonic extraction effect were discussed in detail, including ultrasonic parameters (frequency, power density, action time), extraction solvent characteristics (polarity, environmental protection, concentration), extraction temperature and time, etc., and how these factors worked together on the extraction process to affect the extraction efficiency and quality of pigments was analyzed. Finally, this paper summarized the application status and research results of ultrasonic assisted extraction technology in the extraction of natural pigment from plants, and proposed future research directions and optimization strategies, aiming to provide theoretical basis and practical guidance for the further promotion and application of this technology, and promote the green, efficient and sustainable development of natural pigment industry.
